FAQs

Are brownies better with oil or butter? ›

the butter brownies actually had a fudgier texture. they were softer, and they really just melted in your mouth. they also had that shiny crust and just better flavor, whereas the oil brownies were actually chewier. they were crunchier at the top and at the edges.

Which oil is best for brownies? ›

Most brownie recipes call for some kind of oil — usually vegetable oil or canola oil. This oil acts as the primary fat in brownie batter, giving it that delicious, fudgy texture we all know and love.

How to make brownie mix better? ›

Add a teaspoon of instant coffee or espresso powder. Throw in a handful of nuts—pecans, walnuts, macadamia, whatever you have on hand. Scoop in a palmful of dried or frozen fruit. Add an extra splash of the top-shelf vanilla extract, or a dab of vanilla paste, or a dash of vanilla powder, to the batter.

What happens if you use milk instead of water in brownie mix? ›

One change is to use milk or heavy cream instead of water. This change will make brownies more moist and gooey since milk is more fatty and flavorful than water. A second change is to use butter instead of oil. For similar reasons to using milk, butter adds a rich and more decadent quality to the batter.

Can I use melted butter instead of oil in brownie mix? ›

You can absolutely substitute butter for the vegetable oil. Use the same quantity specified in the directions (for example, if it calls for 1/3 cup of oil, use 5 1/3 tablespoons of butter). Melt it down, then let it cool a bit. You might not ever go back to oil!

Is it better to bake brownies with canola or olive oil? ›

Can I Replace Canola Oil or Butter with Olive Oil? Yes, it's a great substitute for both because it not only lends more flavor, it has a better texture, and is healthier. To substitute for vegetable oil in brownies, use a 1:1 ratio.

What does olive oil do to brownies? ›

So yes, olive oil in brownie mix can slightly alter the overall flavor of your brownies. Actually, some people intentionally use a flavored or infused olive oil in their brownie recipe.

Should you add baking powder to brownies? ›

Many brownie recipes don't contain baking powder or baking soda; these recipes tend to be for the dense, sometimes chewy, kind. Cakelike brownies usually contain a leavening agent, which helps give them their fluffy texture. The technique you use also makes a difference in the texture of the final product.

What does adding an extra egg to brownie mix do? ›

If you want to get a little more creative with your brownie mix hacks, add an extra egg to the batter. The extra protein will help thicken up the batter and make it fluffier, creating a more decadent, fudgy texture. You can also add the yolk by itself in addition to the 2 eggs a box brownie mix typically calls for.

Should brownie batter sit before baking? ›

Making Brownie Batter in Advance

Because most brownie recipes call for eggs, the batter shouldn't sit out for longer than two hours before baking. On the other hand, the sauce and dry ingredients can be made a few days in advance and refrigerated for freshness.

Does chilling brownie batter make it better? ›

Flavor-wise, the ones baked from refrigerated batter did taste a little more intense — richer, more chocolate-y.

What is the best thing to add to brownies? ›

All the mix-ins

Experiment with pretzels, candy, or even potato chips (trust me, the salty crunch really is so good here) to add an extra boost of flavor and a crunchy texture. For a really fun addition that adds a ton of color, stir some strawberries or blueberries into the batter.

Should brownie batter be thick or runny? ›

The ideal consistency of brownie mix is thick and gooey, similar to a thick cake batter. When you mix the ingredients together, the batter should be smooth and free of lumps, with a slightly sticky texture. This consistency is important for achieving moist and fudgy brownies that are rich in flavor.

What makes brownies fall apart? ›

Various causes include overbaking, underbaking, cutting the brownies too quickly, and lacking oil and fluid contents in the recipe.

Is it better to bake with vegetable oil or butter? ›

Also, because oil is 100% fat, it doesn't react with flour the way butter does (butter contains water). Because of that, your cookies won't be as fluffy. If you're a fan of flat cookies, then using oil is an excellent option. Butter, on the other hand, contains water which helps with leavening the dough.

Why do you put butter in brownies? ›

The job of butter in baking (besides being delicious) is to give richness, tenderness and structure to cookies, cakes, pies and pastries. We alter the way butter works in a recipe by changing its temperature and choosing when to combine it with the other ingredients.

Is it better to use butter or coconut oil in brownies? ›

For baked goods that require solid fats, either choice will work, it really just depends on the flavor you desire. Coconut oil will lend a light, slightly sweet flavor versus butter's, well…, buttery flavor!

Should I butter pan for brownies? ›

Baking in a too-small pan may result in brownies with undercooked centers. Be sure to select a light-colored, shiny pan, which will conduct heat evenly. Glass or dark-colored pans can cause the edges to overbake or even burn. Always grease the pan thoroughly with shortening, softened butter, or cooking spray.
